Anyone who works with food, from the storeman to the head Chef, has a responsibility for safeguarding the health of consumers. All food handlers (cooks, chefs, etc) are responsible for ensuring that the food they prepare, serve and sell (or give away) is safe to eat.
In this course we've taken the standard Level 2 award in food safety for catering and added information specific to those who cook outdoors, away from domestic or professional kitchens. We look at the pitfalls of cooking outdoors and how and where the existing food safety legislation has to be adopted even when cooking outdoors.
We've also added several game meat preparation sessions to this course which will give the learner an practical experience of how to butcher and cook game outdoors using a range of traditional techniques.
Please note that if you're the owner/manager of a food business and are responsible for writing policies and procedure documents, you will need to attend the level 3 training course.
Following successful completion of the course and assessments, the learner will receive the following Ofqual regulated course certificate which is valid for 3 years:
The qualification is accepted by Local Authority Environmental Health Officers & meets UK & EU Legal requirements. In addition to the Ofqual regulated course certificate, learners will also receive the 2 day Food Safety Course for Outdoor Cooks CPD certificate issued by Chris Garland Training.
The course syllabus includes:
Certificate: The Ofqual regulated course certificate is valid for 3 years & is issued as an A4 sized paper certificate & credit card sized plastic certificate. The Chris Garland Training CPD certificate is issued as an A4 sized paper certificate.
Course duration: 12 guided learning hours with a further 3 hours self-study.
Test: Multiple-choice test at the end.
Geographical coverage: This qualification is available to learners in England, Wales and Northern Ireland. The Qualification can be delivered in other countries; however, candidates should be aware that the content is designed to meet current UK legislation.
